Sweet and Sour chicken

Ingredients
  1. chicken 300 gms
  2. ginger 1knob
  3. garlic 15-20 cloves
  4. cornflour 11/2 tbsp
  5. eggs 1
  6. pineapple (diced) 1 cup
  7. carrots (diced) 1 cup
  8. Chinese cabbage (diced) 1 cup
  9. red,green and yellow peppers 1 cup
  10. light soya sauce 1 tsp
  11. veg oil 1 tbsp
  12. onions (diced) 1 cup.

Method
  1. Marinade the chicken in a marinade of ginger and garlic paste, some cornflour along with soy sauce and salt. Keep it aside for an hour.
  2. In a wok take some oil saute in carrots, the cabbage the onions and bell peppers and add some ketchup and tomato juice to it bring to a slight boil.
  3. Fry the chicken and add the wok along with some stock and set it to simmer
  4. Garnish with coriander and serve with rice.
